The Big Guy just came in and gave me what sounds like an interesting assignment. A couple of times he used the expression "where the cheese is binding" to mean "the sticking point" or "the thorny part of this deal". E.g. "The acquiring company proposes to do X and Y, but where the cheese is binding is that X may not permit Z to happen on schedule."
My quick Google search for the expression showed nothing but this page, which is a far cry from an answer.
