What would you suggest doing with the two enormous (at least 30 lbs each) Hubbard squashes in the garden?

When confront with enormous squashes, my instinct is to make a soup. My sis has a lovely recipe that uses many different kinds of squashes, but adapts well to single squash types as well. It also has sauteed apples, onions, and lots of ginger and curry. She made it for Thanksgiving last year and it was a total hit. I'll see if I can get it from here, and email it to you...
I never tried this one. I prefer squash of more manageable size (acorn, butternut). However, there are some great recipes out there:
Hubbard Squash Soup (Hl)
Recipe By : RECIPE FOR HEALTH SHOW #RHI027
Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

1 tablespoon virgin olive oil
1 onion -- finely diced
2 garlic cloves -- finely diced
1 quart vegetable broth or water
4 cups hubbard squash -- pureed
--about 1 medium squash
1 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cinnamon
1/8 teaspoon mace
1 cup heavy cream
1/2 cup chopped scallion
Heat the olive oil and saute the onion and garlic until golden. Add the
broth and simmer 15 minutes. Add the squash and the salt, pepper, cinnamon
and mace, and simmer for another 15 minutes. Add the heavy cream, and
continue to simmer 5 to 6 minutes until heated through. Serve garnished
with chopped scallion.
Yield: 4 servings
Recipe from Gino's Kitchen: Nourishing the Soul by Gino Dalesandro
A flavorful squash casserole, made with Hubbard squash.
INGREDIENTS:
3 tablespoons butter
1/2 cup chopped onion
1 medium green bell pepper, chopped
3 1/2 cups mashed, cooked Hubbard squash
salt and pepper
1/2 cup crushed corn flakes or cracker crumbs
PREPARATION:
Directions for hubbard squash recipe.
In a medium skillet, melt butter over medium low heat; sauté onion and green bell pepper until tender. Add squash; season with salt and pepper to taste. Transfer mixture to a buttered shallow baking dish and sprinkle with crumbs. Bake hubbard squash recipe at 400° F for about 25 to 30 minutes.
Hubbard squash recipe serves 4.
A receipe that I make using butternut squash in the microwave might work with the hubbard squash:
4 cups of squash
1 can of black beans
1 cup orange juice
chili powder (tablespoon or more if you like)
cube the squash and toss in the OJ and chili powder. Cover and nuke for 10-20 minutes. add the black beans and toss. nuke for about 10 more minutes (until beans are heated and squash is tender).
Haven't made this in a while (I got rid of the microwave). If I remember correctly, I also tossed in some toasted walnuts for a little added crunch and flavor.
Sorry for the constant posts. Post what you ultimately try. foodtv.com should have some receipes. Otherwise, just throw hubbard squash into google. Lots of receipes should come up.
Stick them in the back of your garage, let them rot, take them out on Halloween night and launch them at unsuspecting trick-or-treaters from your roof.
